Nothing Says Summer Like Fresh Peach Frozen Yogurt

Peaches are one of the quintessential summer fruits. There is nothing like a sweet juicy peach that is so perfectly ripe it drips peach juice right down your chin when you bite into it. For peaches that are super ripe (maybe on their way out) this light peach frozen yogurt does this sweet fruit justice.

Ingredients:

  • 4 uber ripe peaches (about 1 pound), peeled, pitted and cubed
  • 2 tablespoon sugar (or more to taste)
  • 2 teaspoon vodka (Cointreau or Triple Sec would work well too)
  • 1 teaspoon lemon juice
  • 2 cups super premium whole milk European style (like Strauss) or Greek style vanilla yogurt

Directions:

Place the peaches in a large bowl and add the sugar and vodka. Toss together and cover with plastic wrap. Leave the peaches out at room temperature for 1 to 2 hours so that the sugar and vodka bring out even more of the natural sweetness of the peaches. Stir occasionally.

Puree the peaches in a food processor. Taste and add more sugar if needed. Remember that the finished frozen yogurt will be slightly less sweet when it is frozen.

Add the lemon juice and the yogurt to the food processor and pulse a few times to mix everything together.

Pour into your ice cream maker and freeze according to manufacturers directions.

Freeze the yogurt for an hour or so to obtain the best texture.

When you’re ready to serve your frozen yogurt, take it out of the freezer and let it temper for about 10 minutes.

Note: Cointreau or Triple Sec would be great instead of vodka.

You could also use plain yogurt and add more sugar and some great vanilla.

    Andrea, truthfully, I think you could even substitute a little bit of orange juice or even more lemon juice. You just want to add little bit of acid to help bring out the sweetness in the fruit and alcohol is a great medium to do this. Hope you get your peaches soon! Gigi
